"At Illahe, our goal is to make wine as naturally as possible from soil to bottle. We work by hand on small lots with age-old techniques and materials. Our focus is to grow and make quality Pinot Noir that express the vintage and their varietal characteristics. We don't use enzymes or additives. Some of our wines are made entirely by hand, with no electricity or modern mechanization. We use a gentle wooden basket press and age our Pinot Noir in French and Oregon oak. Quality wine starts with quality fruit in the vineyard. Our 80-acre, south-facing vineyard lives in shallow clay soils "
Illahe is a LIVE-certified, Salmon Safe vineyard. We use cover crops throughout the vineyard to benefit the soil and for biodiversity. As part of Oregon's Deep Roots Coalition, which promotes responsible water management, we do not irrigate mature plants. We do extensive green pruning and conduct plant topping. All pruning, as well as the harvesting, is done by hand. Sulfur spray is only used to control for powdery mildew and botrytis.
We aim for balance and optimal ripeness. This includes leaf pulling to decrease shade and dropping green clusters after the grapes ripen (veraison). One of our goals at Illahe is to reduce our reliance on fossil fuels – we have installed solar panels on our winery.
As one of Oregon’s few horse-powered vineyards we utilize two horses of Percheron, Doc and Bea, to mow and deliver grapes to the winery at harvest
2018 was another great vintage in Oregon. We had a moderate winter and normal budbreak and bloom in the Spring. By Summer we were back to warmer than usual temperatures, similar to 2014, 15 and 16 (this seems to be a trend now). We had a cool down at the beginning of September which allowed for great flavor development before picking. We are looking forward to seeing these wines develop in bottle for years to come.
This pinot is 100% estate grown and handpicked. We do not add anything to extract color. We use 20% whole cluster. Fermentation is 100% native yeast. We macerate on the skins for 24 days, scoop the pomace into the press by hand and press in a wood basket. This wine is aged for 9 months in barrel with 10% new French oak barrels and 90% neutral French oak barrels.
"Aromas of Blueberry compote, kola nut, dried cranberry, graphite, lead into flavors of tamarind paste, violet, quince, thai basil and cedar chest. This wine finishes with more fruit, a little baking spice, silky tannins and a warm hug. The wine retains its velvet mouthfeel through a process of clarification by racking. For this high quality pinot noir, this wine is a great value"❣️
