Domaine Collin Crémant de Limoux Brut Cuvée Rosé France Sparkling
"An under-celebrated while reliable source of value sparkling wine rests in the Southern France region of Limoux. In the foothills of Languedoc's Pyrénées, near the historic city of Carcassonne, stands the original Abbey of Dom Perignon, the legendary cultivator of the wine that would later come to be known as Champagne. It is said that the first sparkling wine actually came from this region, produced in 1531, by the monks at the abbey in Saint-Hilaire. Domaine Collin is owned by Philippe & Marie-Hélène Collin. It was established in 1980. They have 18 hectares with clay-limestone and gravel soils, perfect for sparkling wine. Philippe comes from Champagne but decided to try his luck in Limoux, the coolest area in the Languedoc. The wine is produced in a traditional method with a second fermentation taking place in the bottle. The wine was elegant and balanced with bright acidity, rich toasty notes and floral components. 75% Chardonnay, 15% Chenin Blanc, 10% Pinot Noir" 25 km to the south of Carcassonne.
